Career highlights

I have been lucky to have worked in some of the best restaurants in the country. A true highlight was when I had the opportunity to bake a cake for the Queen of England.

Who is your favourite chef or inspirational figure?

Thomas Kellar is a true inspiration because of his perfectionism and locally, I follow Nicolas van der Walt who I regard to be a true pastry artist.

Favourite dish to make and why?

All things sweet!

What's your best cooking tip?

Don’t be afraid to use all your senses when cooking/baking - taste, smell and touch your food. Combine unusual textures, experiment with flavours and always think out of the box. Your creation should also taste as good as it looks.
