I worked for Cynthias in Pretoria (a highly regarded restaurant) as the Head Chef, as well as the Head Chef of Knife Restaurant in Crystal Towers Hotel.

Favourite dish to make and why?
I wouldn’t necessarily say that venison is my favourite dish, but I love working with it because one can always transform the dish to suit any occasion.
