Patisserie - I have worked in many kitchens where I started out as a trainee chef and later studying a combined Diploma. I have worked for The One and Only Hotel, The Vineyard Hotel and The Sweetest Thing.
How many years have you been in the industry?
I have been in the industry for 8 years.
Working at The one & Only Hotel was definitely a career highlight and a great learning experience for me.
Who is your favourite chef or inspirational figure?
An inspirational chef for me is Marco Pierre White, his story was such an inspiration to me when I was training to be a chef. Other chefs I follow and whose recipes I love cooking are Delia Smith and Donna Hay.

Take your time, be patient - especially with baking. It's a science and an art which with enough practice, you will perfect.
