Who is your favourite chef or inspirational figure?

Ina Garten “The Barefoot Contessa”. She has no formal culinary training but has been extremely successful in the food industry. She cooks with such precision creating delicious dishes using fresh, basic ingredients.

Favourite dish to make and why?

Milk tart. It is a traditional South African dish and no other country has an identical recipe. It is always a crowd pleaser and can easily be infused with other flavours like chai tea or orange blossom, for example.

What's your best cooking tip?

Cook with passion and love. When baking, weigh out ingredients on a scale rather than in measuring cups or spoons - this is more accurate because pastry is a science.
