Chef Afzal Mohammed graduated from our Durban Campus in 2011, after completing a Combination Programme in Culinary Arts. After receiving valuable industry experience, he decided to join the Capsicum team as a lecturer at the Durban Campus.
Chef Afzal gives us his take on local flavours, “Durban is blessed with a rich multi-cultural society where tradition is embraced by everyone. The foundation left by our forefathers might have lacked the creative flair that we find in today’s youth, but the basic principles of flavour, texture and colour combinations have seemed to cling to us like the stubborn generation we are.
Local resources are widely available from the sugar mills which feed sweetness into our pastry classes, to the spice markets that bring the heat to many of our locally-inspired dishes. As one of the largest Chef schools in the country, we aim to take the fresh buds of passion in our students and develop them into blossoming gardens.”
