Panna cotta is a creamy, set dessert from the Northern Italian region of Piemonte. It is eaten all over Italy where it is served with wild berries, caramel, chocolate sauce or fruit coulis. Panna cotta is made by simmering together cream, milk and sugar, mixing this with gelatin, and letting it cool until set. This delicious Vanilla panna cotta is made all the more decadent with the addition of chocolate. It is a great one to make even a day ahead and it’s always special for a dinner party!
- 500g milk
- 1000g cream
- 240g sugar
- 7 gelatine leaves
- 2 vanilla pods
- 200g white couverture
- 4 cinnamon sticks
- Boil the cream, milk, sugar, cinnamon and vanilla together.
- Hydrate the gelatine, add to the warm cream and melt.
- Pour the warm cream mixture over chocolate and mix until dissolved.
- Strain and allow the mixture to cool, so that pods are evenly in the mix.
- Set in moulds.
Bowl of ice water for suspending seeds in the mixture
