Recipe of the Month: Cheesy Corn Bread by Chef Lesley Walker from our Boksburg Campus.
This month we celebrate the art of making bread and butter. Freshly baked bread is one of the best tasting food items invented by humankind, and it is also one of the oldest. No matter how far back you look into history, you’ll find that people have always baked and eaten bread, and butter is the faithful friend of this indulgence – the constant symbol of good living.
We asked Chef Lesley to share one of her favourite bread recipes, but it had to be scrumptiously tasty and easy to make. Thank you Chef, we can’t wait to try this one.
“The bread comes from a basic soda bread recipe that has been adjusted to suit the tastes of my family and friends and the availability of ingredients in my cupboards at home. It is very much the go to bread when we have people over for a braai as it requires very little preparation and no proving at all. No one wants to be slaving away in the kitchen while your family and friends are around the braai with a drink in hand and some good conversation. This bread comes out the oven and is a complete winner to serve with the meat and a fresh salad or with some pate and preserves . There is also something very South African about a cheese and corn bread.” – Chef Lesley Walker
- 1 cup grated cheddar cheese
- 1 cup flour
- 2 teaspoons baking powder
- ½ tin sweetcorn
- 1 tablespoon chopped parsley
- 180ml milk
- A healthy pinch of salt
- A pinch of cayenne pepper
- Pre-heat the oven to 180°C
- Line a loaf tin with margarine and flour.
- In a large mixing bowl combine the flour, baking powder, cheese, sweetcorn and parsley.
- Add the salt, cayenne pepper and milk and mix well.
- Place mixture in loaf tin and bake for 30-40mins.
You can never go wrong with a good bread recipe – it’s what makes every meal complete. This cheesy corn bread recipe is absolutely delicious, and it’s easy! This recipe is a keeper!
