Executive Chef Alfred Henry's Ham and Chicken on Rye Bread Recipe
Ingredients
Wood fired and baked rye bread, topped with the following:
- Parma ham
- vine roasted tomato (replaces the fresh tomato)
- confit chicken breast infused with rosemary, garlic and lime (for the recipe on how to make the confit chicken breast)
- balsamic pickled onions
- fresh cucumber ribbons
- poached egg (soft)
- fresh baby rocket leaves ( replaces the lettuce)
- hollandaise sauce (replaces the mayo)
Instructions
- Top with baby beat sprouts for colour and flavour
