MEET Nikki Linnebank, the “40-something” owner of Shot Brew Bistro at 22 Rockview Road.
Linnebank was in sales and made a life-changing career choice when her eldest daughter Danielle left for university.
“I decided to follow my passion and become a chef. I joined Capsicum Culinary Studio and attended classes on a Monday and Wednesday night. My first shock came when I had to complete assignments. In ‘my day’ we went to the library, but I had to learn how to research online.”
This was easier said than done, but 18 months later, Linnebank qualified as a chef with a special award and had completed 380 hours of industry practicals.
“I was the eldest student and standing on your feet the whole day wearing safety boots and lifting boxes is not for sissies,” she says.
Linnebank did not have a set plan, but when she visited beauty spa owner Hannelize van Heerden at 22 Rockview Road, and Van Heerden suggested she take over the coffee shop an idea started brewing and resulted in Shot Brew Bistro opening its doors in April.
“I also wanted to attend cooking classes and we are now offering children’s cooking classes on Tuesdays and Fridays during school terms and Holiday Club lessons during school holidays.
“Danielle assisted me to set up and post on Facebook and Instagram every day and we quickly succeeded,” she says.
Adult cooking classes are led by Wally Linda and interested parties can visit the “Shot Brew Bistro” Facebook page.
On Saturday afternoons and nights the restaurant is open for events and they can seat 45 guests outside and 20 inside. These include anything from high teas to team building.
Currently, the restaurant has four permanent and four casual staff members.
“We pride ourselves on making everything different, offering a refreshing alternative to franchise food outlets. Good food does not have to be fine dining, and we offer chef choice dishes every day. My favourite is roasted butternut and chicken salad,” Linnebank said.
When she is not cooking and brewing, Linnebank spends time with her husband and other daughters, Leandra, 13 and Melissa, 17.
