Colour has a profound effect on how you taste food as it has the ability to enhance or deter your sense of flavour. This is commonly referred to as ‘eating with your eyes’ and it’s certainly a phenomenon that chefs need to be aware of in order to learn how to effectively use it. In saying so, eating is no longer just to satisfy hunger, it’s now an entire sensory experience.
Deliciously Appealing Mind Games
Think about all those adverts you see for foods.
Pizzas stacked with bright tasty ingredients, bowls of steaming pasta or a beautifully iced cake. This food looks brighter and completely different in an advert than real life because of food styling that makes it look more enticing in order for you to purchase them.
However, in restaurants it’s different. Chefs are trained to plate dishes to appear as aesthetically appealing as possible. But, there’s no denying that they rely on the colour of the ingredients to make a dish or dessert look that much more appealing. And, this is where their creative flair and artistic culinary skill comes in.
Tricks of the Trade
At Capsicum Culinary Studio we believe that this presentation practice is vital. Therefore, we encourage our students to take their time in plating their dishes, ensuring that their colours are not only vibrant, but also appetising.
In addition to bright ingredients, there are several other aspects that contribute to a deliciously looking plate, such as:
- Crockery, like slates or bread boards instead of normal plates
- Markings, such as griddle imprints
- Shapes, as in quenelle mousse
For example, take this orange syrup cheesecake by Capsicum student Lee-Ann Watkins:
The creamy white texture of the cheesecake is perfectly bordered by the bright orange syrup. The orange slice below, glows an appetising caramel colour, which compliments the golden brown base of the cheesecake. To top it off, the dark granite slab which it’s placed on, delivers a stark background to make the orange and white stand out even more.
Brightly coloured ingredients are a gift from Mother Nature, a treat to cook with and a delight on your plate. Sign up with Capsicum Culinary Studio and let us help you, take your love for colour to the next level.
